chicken fajitas

keryn asked for the recipe so here it goes:

i so cheat and buy the fajita seasoning packet at walmart

it's the {great value brand even} for 50 cents

i actually boil the chicken on the stove top that way it doesn't dry out.
step 1
2-3 boneless skinless chicken breasts {thawed}{equal to 1 pound}
a pot of water with enough water to cover the chicken in it.
put the pot on the stove{uncovered} on high until the water boils, then reduce heat to low and cover and cook for 15 minutes.

Step 2
remove from heat, drain the water and let cool. Then marinade in a ziploc freezer bag with

1 great value brand fajita seasoning packet
1/4 cup of water
2 tbsp of vegetable oil
{these are the instructions on the packet actually}
shake this up in the bag and chill in fridge and allow to marinate for 2 hours

step 3
dice up the chicken and heat it up in the frying pan and i like to add the rest of the marinade juice in with it and cook it until the juice pretty much is cooked right into the chicken {this is about 10 minutes or so}

step 4
serve in tortillas with your favorite toppings

mmmmmm.... tastes like chicken
